Peel two apples and cut into thin slices. Place slices in a small saucepan with the rind from two thin lemon slices, cane sugar (teaspoon) and white vinegar (two teaspons). Cover with water, cook and blend.
Salt and pepper a pork loin before placing in a pan with sage, rosemary, a garlic clove and extra virgin olive oil. Simmer, add white wine and let it evaporate, then cook adding vegetable stock as needed.
Peel the potatoes and cut into it to in various places to insert bacon and rosemary. Salt, pepper drizzle with olive oil before placing the baking tray in the oven at 170°C for 20 minutes.
Slice two red onions into thin strips and place in a pan with a little olive oil, 2 teaspoons of cane sugar and salt to taste. When the sugar melts, simmer with red vinegar until reduced, adding a little water and cooking on a low flame until the onions are soft.
Assemble the dish as per the picture and… buon appetito!
